Classic herb native to Ontario. Produces purple or pink balls of starry flower clusters in mid-to-late spring and often into the summer. Both leaves and flowers are edible and used for onion flavouring. Chives can be grown virtually anywhere -- sun or shade, in many soil types. Some interesting facts about Chives: The folliage of Chives is repulsive to insects due to its high sulphur compounds. Farmers are known to plant chives as border plants or between rocks to protect their crops from other pests. The flowers can be used as a garnish in dishes. Chives do not lose their taste or texture when frozen. The Juice from the leaves is used to fight fungal infections and help scab. Chives can be found growing in the wild throughout most of Canada.
